The second option discussed by Dr. Stehest uses the low-meat diet.

It states:

(2) However, if humans switched to a low-livestock diet then about 15 million square kilometers of farmland could be converted to the growing of vegetation and bioenergy crops

A low-livestock diet, according to Stehfest, consists of a diet of 70 grams of beef and 325 grams of chicken and eggs each week. In such a case, greenhouse gas emissions would decrease 10%.

Thus, humans could attain the 450 million parts per million of carbon dioxide by only reducing greenhouse gas emissions by one-half by 2050. This would dramatically reduce the cost of fighting climate change and controlling greenhouse gas emissions.

In fact, in the New Scientist article, it states “Cutting back on beefburgers and bacon could wipe $20 trillion off the cost of fighting climate change.”

In a similar December 8, 2008 article by IslandPress.org called “Time to break the low-meat barrier” Dr. Pachauri, head of the IPCC (Intergovernmental Panel on Climate Change, which is part of the United Nations), is quoted by the author Ann Vileisis to have said, “… if everyone ate less meat, it would be more effective at reducing green house gasses than switching to hybrid cars. (shifting to a non-meat diet would reduce 1.5 tons of carbon dioxide per person per year, while trading a sedan for a hybrid would reduce emissions by roughly 1 ton per year).”
