Tequila is harvested from the agave plant. Traditionally, the agave plant is planted, tended, and harvested manually.

Jimadors harvest the plant, with knowledge passed down from their ancestors. They work quickly when in the fields, making sure to pull out the “pups” without damaging the “mother” plant.

When harvesting, the plant must be removed at just the right time in order to acquire just the right amount of sugar within the plant. Many tequila companies still use the traditional methods used for hundreds of years.

Others don’t.
