The researchers found that steaks marinated in either beer or red wine had lower levels of some types of HAs.

Specifically, after six hours of marination two types of HAs were reduced by 88% (when marinated with beer) and 40% (when marinated with red wine).

When marinating steaks for four hours in beer and six hours in red wine, a third type of HA was also effectively reduced over unmarinated steaks.

The researchers also tested the beer-marinated steaks and the red-wine-marinated steaks for smell, taste, and appearance.

Specifically, people on two trained sensory panels preferred the beer-marinated steaks over the red-wine-marinated steaks.

However, BBC News report in the article “Marinating 'may cut cancer risk'” that “… experts said the effect on health was likely to be minimal.”
