iJailBreak relies on the TIFF exploit disclosed by 'Niacin' and 'Dre', so it will most likely stop working as soon as Apple releases a security update for the iPod touch. The exploit uses a deliberately malformed TIFF file to trick the iPod into executing code contained within the file. Similar exploits have been discovered for Windows and Mac OS X.
